This bottle of Ichibiki shoyu is a Saishikomi Shoyu (再仕込み), which goes through a twofold fermenting process that takes twice as long as other types of shoyu. It has the umami flavor of Hidaka seaweed as well as a high concentration of Mirin. This produces a dark shoyu with a mellow flavor of salty, sweet, and slightly spicy. It helps to bring out the delicious taste of the sashimi menu very well.
After opening, the lid should be completely closed. The product should be used up within 90 days and kept at room temperature.
